Sea Salt Ginger Cookies

Oh, how I love this time of year. All the spices wafting through the air as my tiny oven does overtime in my tiny kitchen. But heck, my whole house is tiny, so I practically drown in cookie aromas wherever I go in my home. No complaints here! Especially when these Sea Salt Ginger Cookies are baking!

The ginger in these really packs a spice-cookie punch! They are soft and cakey, and oh so yummy! The perfect comfort cookie this time of year!

In fact, I really went for the ginger overload and brewed myself a strong cup of ginger tea to have with these. What a fabulous way to curl up in front of the fireplace!

Now if I could just get my fireplace working. I mean, it works, but my son stuffed one of his books through the vent, and I can’t get to it. I have to dismantle the entire inside of the fireplace just to get the book out before I light the darn thing, or I many have a fire where I don’t want one! Kids.

Anyhoo, if your fireplace is working, you should seriously consider having some of these in front of it. I don’t have first hand experience (yet), but I’m sure it will be a magical holiday cookie experience!
